Grades and sizes
Medjouls are usually sold as large, jumbo or super jumbo. Bigger dates carry more of the soft, caramel-like flesh around the stone. A light dusting of white on the skin is sugar bloom, not mould — it fades if you warm the date gently.
How to store them
Keep dates in an airtight container. At room temperature they hold for a month; refrigerated, up to a year. If they firm up, ten seconds of steam or a brief warm-water rinse brings the softness back.
